Go Green!

{a very good day to be an Irish Spartan}
Also a good day to share a couple of my celebratory favorites...

 Beer Bread 
  • 3 c self-rising flour
  • 2/3 c sugar
  • 1 bottle or can of warm beer (+ 1 cold one to drink, especially if your kids are "helping" in the kitchen☺)
Preheat oven to 350. Mix all ingredients together with wooden spoon. Grease bottom of glass bread pan with butter. Pour in batter, let rest 10 minutes. Bake for 45 minutes.

Mint Chocolate Cake
  • 1 box white cake mix
  • 8 T creme de methe liqueur, divided 
  • 8 oz cool whip 
  • fudge ice cream topping
  • crushed mint oreos
    Mix in 5 T mint liqueur to cake ingredients and bake as directed. Allow cake to cool. Spread thin layer of fudge on top. Mix 3 T mint liqueur into cool whip, spread on top of fudge. Refrigerate for a few hours or overnight. Just before serving, sprinkle oreos on top (I did sprinkles on cupcakes instead).
