Popcorn Balls

A fun activity to do with the kids for the holidays!  This recipe was stolen from my girlfriend, Danielle, and is a healthier take on the traditional popcorn balls; they're made with honey & sugar instead of the usual gelatin & corn syrup. The honey was a tad too much for my taste so I may try to cut down on the amount next time (there are tons of variations on this recipe if you google), but the kids loved them and Charlotte's preschool class was my target audience...so I do declare success :)

POPCORN BALLS
  • 1/2 cup honey
  • 1/4 cup sugar
  • 1 tablespoon butter, plus more for handling
  • 1/2 teaspoon cinnamon
  • 5 cups hot air-popped popcorn
1. Place air-popped popcorn in a large bowl and set aside.

2. In a microwave-safe bowl, combine honey, sugar, cinnamon and 1 tablespoon of softened butter. Microwave for 40 seconds.

3. Pour honey mixture over popcorn and stir to coat with a wooden spoon, then set aside to cool.

4. After thoroughly washing your hands first, butter your hands then shape popcorn into balls.

I had just turned my camera on and was messing with the settings as I clicked.
This is what I got...a happy mistake :)
Ah, the simple joy of an air-popper.

Ready for a preschool birthday celebration!
P.S.  Send along a box of wipes :)
